Florentine Skillet Brunch
Serving a family or party of six, this healthy breakfast dish by
Sheri Blackburn
as featured in the cookbook ‘Edible Art’, published by Brandon
Gallery, located in Fallbrook, CA.
2 Tbsp. cooking oil
3 cups shredded, cooked potatoes
¼ cup onions, chopped
¼ cup green peppers, chopped
¼ cup pimientos, chopped
Half of a 10 oz. package frozen spinach, cooked
½ cup drained cottage cheese
1 ½ cup egg substitute
½ tsp. celery salt
½ cup shredded cheese
1 tomato cut into wedges
Combine
potatoes, onion, green pepper, pimiento, salt and pepper into
skillet.
Cook over low
heat for 10 minutes.
Combine spinach and cottage cheese, and set aside.
Beat eggs,
celery salt, and pepper.
Spoon spinach mixture over potatoes. Pour eggs on top.
Cover and cook
on low for about 10 minutes or until set.
Sprinkle with cheese. Cover and cook 1-3 minutes.
Garnish with
tomato wedges. Serves 6.
