This is from Rosemary Nightingale, as published in her recipe book - Squaw Valley Herb Gardens Recipes & Remedies Book.

Ginger is one of the oldest and most important spices in the ancient word, grown in the tropics of Asia over 3000 years ago. Widely used in China and India, it was one of the first spices to reach the Mediterranean by way of Arabic traders.
The Conquistadors brought it to America by way of Jamaica. It was the rage in Great Britain in the 1880’s. The Chinese brought it to California during the westward expansion. It is valued medicinally and for its culinary flavor.
Ginger adds a healthy, warm spice to sauces, stews, soups, desserts, and teas. It is often paired with garlic in sweet and savory dishes from India and China. It aids digestion, soothes upset stomachs, stimulates circulation and helps in the relief of nausea, congestion, chills, cramps, aches and pains. And it improves resistance to infection.

Ginger Recipe: Ginger-Apricot Spread
This hor's doeuvre is healthy with great history, and is perfect for picnics and socials! You can make it ahead of time, and it keeps well in the fridge for guests dropping by during the summer!

Dried Apricots
Crystallized Ginger
Cream Cheese

Two parts apricots, to one part ginger with enough softened cream cheese to blend and spread on your favorite cracker. Thin sesame and savory crackers complement this delicious and healthy spread.

Chop 2/3 cup apricots into coarse ¼” chunks.
Chop 1/3 cup ginger into very small chunks.
Mix in 1 ½ cups of softened cream cheese.
Store covered in refrigerator – stores well up to a week.

Ginger Remedy: Ginger Bath
I recommend the Ginger Bath as it polishes the skin and is a gentle detox. It's also recommended for arthritis and rheumatism. It's a great bath for helping our bodies get well and rejuvenated. Excellent in a bath tub.

Boil 1-3 Tbsp. ginger root powder in 2-3 cups water. Bring tea to a rolling boil for 5-10 minutes.
Then add 5-10 drops of Lavender essential oil to compliment the bath. Pour into hot bathwater and soak!
It's great for aches and pains!
