RV Friendly Recipes by Tweet of Circle RV Ranch

An experienced RV-er and Manager of the Circle RV Ranch in El Cajon, Tweet loves to cook and specializes in easy-to-prepare on the road, but still delicious recipes. This is the first in a series of recipes for our brand new
RV/CAMPING Connection section.

BBQ Beef        Lemon Bars

Lemon Bars

1 package (dry) angel food cake mix
1 can of lemonpie filling

Mix the two ingredients together, mixing well.  Spread on jelly roll pan that has been sprayed with Pam.  Bake at 350 degrees for 20 to 25 minutes.  

Frost with the following:

1/2 box powdered sugar
2 Tbs. butter, softened
1 Tbs. lemon juice
enough water to spread

Believe it or not this is very good!  Like a sponge cake.  Very light and very tasty.
Any pie filling can be substituted for the lemon pie filling.

Ants bothering you?  Use a fabric softener sheet.  Put the sheet where the ants are coming in.  

 

 

BBQ Beef

1 1/2 lb. ground sirloin
1 (8oz) can tomato sauce
1 onion chopped
2 Tbsp. brown sugar
1 cup water
1 cup BullsEye Regular BBQ sauce

Brown meat and onions until onions are soft, drain. Add tomato sauce, water, BBQ sauce and sugar. Cook on medium heat until juice is absorbed. Serve with crusty rolls or hamburger buns.
